Eat, Drink and be Married

It’s hard to imagine a celebration without copious amounts of food. We are first introduced to this concept at a young age when we’re given an oversized cake and other sweet treats as early as our first birthday (never mind the fact that the gummy infant whose birthday it actually is can’t even enjoy the icing covered baked good). This continues throughout our lives with countless feasts associated with coming-of-age festivities, graduation dinners, and holidays of all religions that are often more commonly associated by the food they bear than anything else.

One special occasion that seems to “take the cake” for food obsession is a wedding. What is meant to be the union of two lovers has become a weekend-long event of eating, drinking, dancing, more eating, and well, more drinking, with the occasional speech. But why not? Love makes people happy, and food and drinks make people even happier, so let’s say bon appetite to the bride and l’chaim to the groom, and dig-in as we celebrate love, family and friendships!

A couple weekends ago, I got to celebrate all of these wonderful things as my cousin Lisa said “I do” to my new cousin Jason. Not only are these two perfect for each other, but they couldn’t have picked a more perfect backdrop for their special day. Located in the snow-capped mountains of Banff Alberta, the well-known Banff Springs Hotel is a chateau-style resort with countless romantic nooks and crannies to explore with your partner. Whether you’re cuddling with your significant-other in the warm hot springs-style outdoor pool, or enjoying an old-fashioned bevy in one of their many lounges, there’s something truly magical about this venue. Even the town of Banff is a couple’s dream with an assortment of delicious restaurants, cafes and candy shops to visit with your sweetheart. Really, to say their choice of location was perfect would be an understatement, and this was also true of the delicious food offered at this beautifully planned occasion.

Even before the actual ceremony began, guests were given delicious appetizers of sushi, bruschetta, and other bite-sized goodies, accompanied by wine, champagne and an assortment of additional aperitifs of their choosing.

After the glass was broken and a roaring “mazel tov” echoed throughout the room, guests moved to the Cascade Ballroom where they were met by a mouth-watering 4-course meal.

To begin, guests enjoyed roma tomatoes and bocconcini cheese with olive oil and basil, followed by a roasted carrot and ginger soup. For the main course, guests had a choice of grilled sablefish with lemongrass and champagne emulsion on a bed of wild rice, sweet potato pavé and seasonal vegetables, or an asparagus and Brie tart with black rice risotto and seasonal vegetables. Dessert was an organic molten chocolate cake with a vanilla bean semifredo. Wine included a 2008 Luigi Bosca Reserva Malbec and a 2010 Sileni Cellar Selection Sauvignon Blanc.

In case guests worked up an appetite dancing to the very talented and lively Livin’ in Swing Band and Orchestra, a separate room was set up housing an assortment of bite-sized desserts and giant warmed pretzels with mustard  – a perfect carb-hit for a late-night energy burst.

A wonderful couple, a wondering wedding. My only wish for them is that they may enjoy many years of romance, dancing, and celebrating with good food and flowing drinks.
